
This was so delicious!
I was perusing Elaina Love's webstore yesterday and found her morning mix for sale. She created a morning drink with chia and coconut powders and some cherry essence. I want to order
that! But for now I used the spirit of her delightful creation with what I have onhand and this morning voila! a beautiful I-Am-Beautiful Pudding.
Do not underestimate the power of these superfoods as your morning elixir! ;)
Cindy's I-Am-Beautiful Pudding
(serves 2)
2 young Thai coconuts water and meat
2 T whole chia seeds
6 soaked prunes with soak water
1-2 T raw carob powder
1 tsp honey (optional)
16 drops Raspberry-Chocolate Stevia
pinch sea salt
1 rounded Tblspn raw maca powder (add only at very end of blending).
Put fresh coconut water in Vitamix and add the chia seeds to soak for at least 10 minutes.
Add other ingredients except maca powder.
Blend until smooth.
Add
maca powder and blend as briefly as you can.
Serve immediately or save some for later as it gels even thicker.

Let me tell you how
chia and coconut is so incredibly remarkable if used on a daily basis. I can tell the difference in my skin within two days of using at least one young thai coconut daily and a tablespoon of chia. I also use 4 capsules of MSM twice daily which the combo is very anti-aging. How, I wonder, can people be so prompt with botoxing their wrinkles and not try cleaning up their diet or putting half of that obsession towards working out?? Hmm. I understand the smoothness botox creates is nice--if you can take the needles and the toxins, just that we need the inside healing
