Coconut Comfort Ice Cream With Ginger Snap Topping

Blend meat of one young thai coconut w/ one frozen banana, two dates, a Tblspn of maca a squirt of lime juice, and top with 's ginger snaps.
1 young Thai coconut
1 frozen banana
2 medjool dates
1 squirt lime juice
1 Tblspn maca
Blend w/ just a few drops of water and plunger if using Vitamix.
Garnish with plenty of Ginger Snaps for a ice cream cookie affect.
This has to comfort me while I take a break from cacao and it's pretty darn good!
