Hey! It's a beautiful day here at the Vitamin Shoppe. How cool is this: I'm surrounded by many healthful products while meeting new folks doing massage demos!
Anyways, no, I haven't been dipping into any of their energy drinks (altho there's still time)--just genuinely excited about my 3rd day on green drinks and AJ w/GSE & freshly ground flaxseed. Running. And plans tonite, AND super clients...
Yes, actually? I'm looking fwd to meeting up w/friend and raw blogger aimee of bittsblog.blogspot.com just before I spend a Sunday running and working out with my son in Ballard area Seattle!
Who wouldn't be ecstatic about all that?
Plus, honestly and truthfully--I always work with wonderful clients. I'm so blessed. Both in Portland, OR, and in Eagan, MN, at the Massage Envy there (I'll be in MN Feb 18 thru Mar 18 so pls book now it's filling fast).

Salad 101

Actually I'm on Day 2 of liquids but made this salad the night before.

It's so delicious eating these vegetable salads on romaine and you feel so good after eating this way over time, that I can't help but recall old addictions and cravings for fast foods and standard American fare.

I think of all the people who haven't yet experienced how amazingly satisfying and delicious whole foods are with just a little help in the prep and condiments department.

This here is a good example of a basic combo of dressing ingredients to end up with mouth-watering scrumptiousness no one can deny.

And you can toss it all up no need to blend or anything.

Start w/ the freshest veggies washed and lettuce patted dry organic if possible.

Drizzle your olive oil first. We are going for rich today--and the 5 flavors of salty sour sweet spicy and bitter? Next a few capfuls of organic apple cider vinegar. Some nutritional yeast 4 creaminess, miso or sea salt, cayenne powder & teeny drizzle agave. Toss Yum

Fun in Kenton --Portland, OR

Gleaned from a Trillium Charter School discussion email: Hat tip to Kerri (Note:Rawprincess Studio is in Kenton 2125 N Willis)


Here's a last-minute notice about a free show in Kenton tomorrow night: Trillium preschool parents Ben Cosloy and Tristan Trotter will both be playing at the World Famous Kenton Club. Tristan's band The Gams plays at 9 and Ben's band Bad Assets will play afterwards.

For those who came to the bash at Trillium in Bloom last spring, Bad Assets was the great country-rock band that played and lots of us danced to. Tristan describes the Gams as "a country-twinged (mostly) chick affair featuring some damn fine talented women (and for this show, one DAMN fine talented man)."

The World Famous Kenton Club is a lovely dive bar with room to dance. It'll be boozy and fun (and smoke-free these days--I love that part--no offense to those who smoke).

Happy Martin Luther King, Jr Birthday Day


Since I'm working all day today I realized I'd be celebrating Martin Luther King Jr's birthday all day at work.
I made these over the top delish raw chocolate "Turtles" and made the MLK greeting and the sig w/ smile face and xo's on the staffroom lounge board. Someone brought the best homemade kombucha today (thx Eli so we're way good here.

What do I want to say? I guess wherever you are, whatever you're doing there are many ways to honor Dr King today around every corner.

Listening across cultural and class lines without interruption, without "helpin'" (unless requested).

Other things like reading The Speech and please ... comment and let me know more ways to honor Dr King. I'm thinking,too. helping out in Haiti by texting cash.

But let me know.

Salad Dressing For Mimi ;) xo

A nice cold pressed vegetable oil
I prefer first cold-pressed olive oil.

Vinegar
Different vinegars give different flavor. A lot of the time I really like Bragg's Apple Cider Vinegar which gives your body good probiotics. I like it with nutritional yeast seasoning and cayenne powder.

Rice vinegar is for Asian flair and is great with a nice raw miso blended in the blender with a little sesame oil, a bell pepper and a bit of fresh garlic. A slice of raw ginger root in the dressing is delicious. That goes great with your romaine and cashews and any veggies really. Add more oil as you let the blender run to create thickness.

A nice balsamic vinegrette is delicious and sweet too. It tastes great on Italian or Greek type salads. (And that's what we had at Houlihan's)

You need a nice high quality sea salt. I used "real salt" on the salad you tasted. I often use pink salt which I got at Ecopolitan in Mpls. They got it from Thailand.

You will want a very organic, non irradiated cayenne powder. You could also consider making your own by drying some fresh red chilis and grinding them up.

Nutritional yeast flakes can be found in the bulk section of most organic markets. Valley Naturals has them. Whole Foods would have them. I used to find them at Rainbow but last time I was there they were all out.

Cashews add a very nice crunch and sweet flavor to the salad. Look for whole raw cashews. (They aren't cheap but you'll use them wisely as a protein alternative to meat, right?)

These are my condiments which I carry with me in a little cute lunchie type bag. Find a cute way to tote your condiments and you can order raw veggies ANYWHERE and be happily (mouth-watering happily) munching and healthy along with any friend or group.

No-Nuts Pudding ;)

Depressing isn't it?

Well, that made me laugh so here goes.

I made this out of soaked dried fruits and soaked chia with just a little honey.

I added 1 tsp E3Live flakes.

That's all!! No nuts, no dates, no chocolate.

I don't like it but maybe it will grow on me. Eww grow get it?

Worth Writing Home About


Chocolate-Chipotle Truffles
Place nuts of choice in food processor--about 2/3 cup. Add some honey, pink salt, raisins (2 to 1 of nut amount).
I put in a few dried banana strips and 4 medjool dates. Plus 1 tablespoon coconut oil.
Add 1 tsp chili powder and several shakes of cayenne powder. Remember to find the freshest non-irradiated organic herbs you can.
Process until dough forms off sides into big blob. Roll into balls and refrigerate until serving.
Makes about 20 medium truffles.

Dinner Tonight

Just another tantalizing raw vegan dinner in cindy's kitchen! ;)

Zucchini "noodles"
(made w/ a potato peeler)
topped w/sundried tomato pesto marinara
(soak sundried toms & process w/walnut, garlic, olive oil, pink salt, a handful of cherry toms fresh)
and garnished w/ avo slices, cherry tomatos, and favorite veggies.
All on a bed of romaine.

Drizzle olive oil and balsamic vinegar over all if desired.

Optional: a shake of cayenne pepper.

Oour Ecopolitan Lunch Today

The Ecopolitan in Minneapolis Minnesota.
We started with the Bruschetta (one piece of bread is missing in photo. ;))

I ordered the Spicy Thai Noodles. It has pineapple and coconut in it and a really nice curry sauce. The noodles were variety with zucchini, radish and others. I liked it a lot because I wanted something lighter but still yummy. Plus it was warming with this weather.


Mr Markgraf ordered the eco-burger. I found it nice and deep and rich. He found it dry and liked his salad most. (I noticed he ate it all though ;))
We wanted a light dessert so Mr M had some sort of sonic shot of cayenne, beet juice and such which an orange slice was garnished to cut the nice bite.



I had the young coconut shake, just coconut milk and meat blended. I asked for no ice but they don't use it anyway so it was lovely.




This is the folder, handmade, for the check brought to our table.



I still wasn't "full" and ever the curious picked up to-go the orange-pistachio uncookie and a carob ball rolled in coconut. I ate these happily on the way home. They were low-glycemic I could tell. I doubt there was any agave. Probably just date or something. I didn't ask.

The Treat Before The Cleanse?

I made this New Years Day and gained about 5lbs eating every day after (lost it again tho)

Anyway its pretty delectable huh = called it Ultra Rich Uncake and the bottom layer was nuts dates and dried bananas. The middle layer was cashew whipped w/honey & hempseeds. The topping was cranberries dates & honey all had pinches of sea salt.

Truly Rich Uncake


look for this recipe and close-ups of eating this delectable Truly Rich Uncake which I created via inspiration of the Rawdorable.com gal miriam (link to follow).
It has cashew icing topped with a layer of cranberry-date sauce.
When my Fiance tasted it he was blown away, "That'll stick to your ribs!" he said. "That's a meal in itself!"
I think he was honestly surprised coming from the spectrum of recently switching to organic meats and having stopped most fast foods several years ago.

Ahhhh green smoothie of the simplest variety.

This new year/decade feels very promising to me. It's been a very long time since I've actually felt optimism and joy at the start of a new year.
