I came up with this purely by accident. Get ready for rich, fattening and really satisfying. I couldn't get a pic of it as it was moving too quickly towards my mouth.
It is very reminiscent of a cooked cobbler and so far is this: (Makes enough for two small tarts).
Grind in dry Vitamix blender:
1c. raw macadamia nuts
Separately in bowl:
3 chopped dates
1 lg Tbspn. coconut butter (I used Artisana)
celtic sea salt pinch
Add macadamia to mashed mixture and mash a little.
Drizzle lemon juice on and fold in.
If you add a nice mango slice it reminds me of the fantastic Ani Phyo recipe someone made at a recent meetup.com potluck (Christine organizes these in Portland, OR). I loved the mango but actually have no idea what's in Phyo's recipe YET. I'm soon to be the proud and drooling owner of this uncookbook.
